food_play - MAHI MAHI ON QUINOA-LENTIL-PEA MEDLEY WITH PAPRIKA-ASPARAGUS by Annabelle Guldner

This was a spontaneous adventure of fridge and pantry hunting. We prepared some quinoa with black sesame seeds as a base. In a different pan black, green and pink lentils and peas were cooked and seasoned with fresh garlic, nutritional yeast and pepper. Zucchinis and mushroom were added to the mixture along with a balsamic reduction and fresh lemon juice. The mahi mahi was placed on the quinoa and steamed for 5-8 minutes. Almonds were roasted for a nutty flavor and sprinkled over the lentil medley. The fish was served over the quinoa and lentils and finished off with a little bit of truffle oil. The asparagus was grilled with paprika and cayenne pepper and arranged around the dish. Voila! Delicious!

When you say you have nothing to cook with, the result usually is fabulous once your rummage through the remaining things in your fridge. That's what we did last night. We has some beautiful wild caught salmon and needed to experiment with a little side dish that would do it justice. Voila - black rice and quinoa with lemons, figs, peas and almonds, seasoned with fresh cilantro, pepper, nutritional yeast and some fresh garlic.... In the end we could've just eaten that by itself, but the salmon really lifted it! Tim grilled the salmon with lemon juice and olive oil and seasoned it with only salt and pepper. It was so yummy and unique and super fun to cook! Another one for the books!

Try this medley we came up with: ground turkey with potatoes, onion, celery, mushrooms, zucchini, bell peppers and jalapenos, seasoned with cardamom, cumin, coriander, ginger, black cumin, turmeric, garlic and black sesame seeds... throw in some peanutbutter to balance the heat...
It was unbelievable and yet another dish that's going on out regular menu!

Avocado dressing infused with lemon and lime zest on organic greens with dill and blood oranges - A salad is always a winner but so it doesn't get boring be experimental with the salad dressing. and add-ons. Throw in some blood oranges on organic greens and dill et voila!

Mushroom and Brie quiche with nuts enhanced with spelt and almond flour - Quiches are a great way to take in something substantial that is still light and summery. I love to spice it up with different mixes and also throw in some unconventional flours for flavor and nutritional value!

Summer bruschetta - Bruschetta is a classic, but the toppings don't have to be classic. I like using healthy or nut and seed breads and cover them with what I feel like. This one is a salmon and caper bruschetta on cream cheese with red onion. But possibilities are endless and you can always create something new and refreshing!
